~Typically made with farmer’s cheese, my version featured baked tofu cubes in the most delicious pureed onion, garlic, and spinach sauce mellowed with just the right amount of coconut cream. I love this dish!!
*Glazed Lentil Apple Walnut Loaf (mild heat) with Allspice Roasted Butternut Squash
~A twist on traditional meatloaf, with celery, raisins, thyme, onions and carrots, with a delicious apple butter balsamic glaze. And my favorite squash recipe that I can’t get enough of!
*Stuffed Portabella Mushrooms (no heat)
~ Two “meaty”mushroom caps jam-packed with a delicious mixture of onion, celery, carrot, spinach, chickpeas, brown rice, pesto, and herbed goat cheese, topped with garlicky roasted grape tomatoes.
